Il Gattopardo is an Italian restaurant in Rotterdam that sustained itself for years by doing one thing: watching what guests actually eat and making more of it.
It could have closed. A traditional Italian restaurant in Rotterdam doesn't look like a premium destination restaurant. But it stayed open because the team continuously observed.
This is the kind of design that's not taught in design schools. This is observational design. You watch how a guest eats. What do they leave behind? What do they finish completely? What order? What combinations seem novel?
Then, certainly after months, you see patterns. And those patterns are your innovation.
Many chefs think: I'm creative, so I invent what to cook. Il Gattopardo's chef thinks: what do people actually want to eat? The things that stay on the plate, people don't want. The things that disappear completely, I can make better.
This is exactly how DIP works. Inclusive production doesn't start with: what would I make if money were no object? It starts with: what do people actually need? What actually works? How can I make it so more people can enjoy it?
Il Gattopardo didn't build an empire. But it built something sustainable by remaining continuously in conversation with reality.
